What You’ll Learn
Knife work, stocks & sauces, baking basics, fresh pasta, proteins (chicken & fish), food safety, storage, efficient workflow, plating, canapés, hosting, and a complete three-course dinner.

Day 1 — Module 1: Mise en Place & Vegetable Knife Skills
Mise en place (prep & organization)
Food hygiene & safe storage
Efficient workstation setup
Vegetable knife techniques
Recipes: Vegetable stock • Minestrone • Vegetable frittata
Day 2 — Module 2: Deboning Knife Skills (Chicken)
Debone a whole chicken and cook every part:
Wings: Honey chicken wings
Breast: Schnitzel
Thigh: Cheese-&-mushroom roulade (duxelles)
Carcass: Chicken stock
Day 3 — Module 3: Filleting Knife Skills (Fish)
Fillet a whole fish and use it nose-to-tail:
Pan-fried fish with garlic, butter, lemon & parsley
Fish stock • Mediterranean fish stew • Fish pie
Day 4 — Module 4: Fresh Pasta
Hand-made pasta fundamentals
Sauces: Bolognese • Carbonara • Pesto
Day 5 — Module 5: Bread Making
Everyday doughs & proofing
Bakes: Focaccia • Dinner rolls • White sandwich loaf • Pizza
Day 6 — Module 6: Plated Desserts
Restaurant-style sweets and plating:
Sticky date pudding • Churros with chocolate sauce
Panna cotta • Chocolate lava cake
Day 7 — Module 7: Canapés & Party Bites

For: 8 sessions
Fees: $1,500.00
For those taking individual sessions, the fees will be $195 nett per participant per session.
For those taking the entire module, the fees will be $1500 nett per participant for all 8 sessions.

Additional Info
Participants will only be issued with the Certificate of Achievement upon completion of all 8 sessions.
Best enrolled as an entire module but you can also enroll for individual sessions.
An entire module is designated as 1 continuous intake and not different sessions from different in takes to make up 8 sessions.
We will need at least 48 hours notice if you cannot come to the class. There will be no make up class if it falls within 48 hours to the class date.
In the unlikely event that a scheduled session does not reach the minimum number required for the session or due to unforeseen exceptional circumstances, We reserves the right to change the date of or cancel the session. If that occurs, a refund of any payment will be offered/given minus any discounts (if applicable. The final fee calculation is subject to the discretion of Goldknight.
