Course Objectives

  

At the end of the course, learners are able to:

LO1: Describe the principles of wine production processes; vinification and viticulture.

LO2: Describe the different types of grapes, their anatomy and the importance of growing environments.

LO3: Evaluate the flavours and characteristics of wines based on their production processes of vinification and viticulture.

LO4: Describe the techniques of wine tasting and formal wine tasting notes.

LO5: Explain information on the types, flavours and characteristics of sparkling, still and fortified wines.

LO6: Evaluate wine vintage and provenance based on sensory analyses.

LO7: Propose wine selection based on the evaluation of wine flavours and characteristics.

Course Content

 LU1: Wine production and its influences on flavour.

LU2: Evaluate the flavours and characteristics of wines.

LU3: Information on sparkling, still and fortified wines.

LU4: Sensory analyses of wine vintage and provenance.

LU5: Recommend a wide range of wine selections.

 

Target Audience

New entree to Food and Beverage industry

Food Handlers (i.e. any individual who prepares food and beverage products in NEA-licensed eating establishments)

  

Assessment 

Training delivery is a combination of lectures, peer practice, group discussion, and self-reflection. Assessment consists of practical performance and oral questioning.

 Duration

2 days (9am-6pm)

Understanding Viticulture, Vinification and Wine Packaging

The course leader was Jayden Lam and he is knowledgeable about all things wine. Being a basic course, Jayden is more than capable of handling all questions asked of him. The class was lively and it helps when you also have friends with you - and we also made friends while attending the course too.
Understanding how wine is made, the essentials of fermentation and how to describe flavours and smells was totally interesting and educational. Just knowing the 6 S actually opens up the whole wine tasting experience.
My only gripe was the range of wines available for tasting... perhaps a few more dollars will bring the whole experience to the next level.
